Sweet Potato + Cauliflower Puree Soup
Ingredients
1/2 sweet potato, chopped
1/2 head of cauliflower, chopped
1 sweet onion, chopped on large chunks
4 garlic cloves
1/2 can full fat coconut milk
1/3 cup of water (possibly more if soup is too thick)
1 tsp sea or smoked salt
1 tsp black pepper
Not only is cauliflower full of antioxidants, like Vitamin C and manganese to detoxify our bodies, it also contains nutrients called glucosinolates to help activate our detoxification enzymes. This makes it a power food after a barre3 workout to intensify our detox process! Be sure to eat it with healthy fats, like coconut milk, so that the fat soluble (or absorbable only if consumed with a fat) vitamins can be used easily by our immune system.
Serves 2
Bring the coconut milk and water together to a boil.
Add the onion, garlic, cauliflower and sweet potato.
Turn down to medium and cover for 25 minutes.
Place in blender with salt and pepper, then blend on high until smooth, for about a minute.
Serve with a touch of salt and pepper on top. Enjoy!
Note:
Brocolli Soup: You can substitute broccoli for the cauliflower.
